Ingredients (4 servings)
- 8oz Pasta ( I use protein plus penne, but your choice)
- 1/2 Onion diced
- 1 Garlic Clove grated
- Oil for sautéing
- 1 Bunch of Kale (leaf stripped from stem, washed and coarsely chopped)
- 1 Bunch of Swiss Chard (leaf stripped from stem, washed and coarsely chopped)
- 1/2 cup of Grated Parmesan
- ½ tsp of Coriander Powder
- Salt and Pepper to Season
- ½ cup Cream
Method
- Get the water boiling. Add salt, a drop of oil, and pasta and set your timer.
- Fry the onion in heated oil until soft.
- Add the garlic.
- Slowly add all the leaf tossing it in the pan as it sautés down until you can get the lid on.
- Once the leaf is soft, transfer it to a blender (carefully as it is hot) blitz and then return to the pan.
- Add the seasoning coriander, salt, pepper, cream, and parmesan. Stir until melted.
- Mix with the pasta and enjoy.
