Recipe – Swiss Chard and Kale Parmesan Pasta

Ingredients (4 servings)

  • 8oz Pasta ( I use protein plus penne, but your choice)
  • 1/2 Onion diced
  • 1 Garlic Clove grated
  • Oil for sautéing
  • 1 Bunch of Kale (leaf stripped from stem, washed and coarsely chopped)
  • 1 Bunch of Swiss Chard (leaf stripped from stem, washed and coarsely chopped)
  • 1/2 cup of Grated Parmesan
  • ½ tsp of Coriander Powder
  • Salt and Pepper to Season
  • ½ cup Cream

Method

  1. Get the water boiling. Add salt, a drop of oil, and pasta and set your timer.
  2. Fry the onion in heated oil until soft.
  3. Add the garlic.
  4. Slowly add all the leaf tossing it in the pan as it sautés down until you can get the lid on.
  5. Once the leaf is soft, transfer it to a blender (carefully as it is hot) blitz and then return to the pan.
  6. Add the seasoning coriander, salt, pepper, cream, and parmesan. Stir until melted.
  7. Mix with the pasta and enjoy.
